Spinach or any greens can be cooked with Indian spices.

Ingredients :

Spinach or Any greens - 200g
-
Red Chilli - 1-2
-
Indian onion shallots - 5-6 or 1/2 medium onion

Cumin (jeera ) powder - ½ tsp
-
Grated Coconut - 1 tblsp (optional)
-
Curry leaves - few (optional)
-
Grated Ginger - 1/4 tsp
-
Oil - 2 tsp
-
Salt - to taste
Method :

Leave greens in a pan of water for about 5 minutes. Wash properly until all the grit is gone.

Chop the onion shallots; Wash the curry leaves; split the red chilli into few pieces. Grate the ginger.

Heat a pan and add oil.

Add curry leaves, onion, grated ginger and chilli. Fry for 1-2 minutes.

Add the greens and salt.

Stir fry until it is cooked.

Garnish with grated coconut.
Notes : Some of the greens take longer to cook. Cook them with little water in a covered pan.
