2 tblsp Urid Dal
-
1 tblsp Salt
-
½ tblsp Methi seeds(Fenugreek)

-
Heat a cast iron Kadai 8”-10” diameter. Rub with gingelly oil.

Pour 3 – 4 tablespoons of batter into the Kadai spread it by rotating it, so that about 1” of the sides of the Kadai is thinly coated and the remaining batter collected at the centre. Care should be taken that it is rotated only once. Cover with a tight fitting lid with handle preferably metal. Lower heat and cook for 3 – 3½ minutes.

When the appam is ready, the edges resemble crisp lace and centre soft and well risen.

Traditionally this is eaten with chicken curry or paya mutton stew. Children relish it with milk or thick coconut milk and sugar.
