Aappam (Hoppers)

Aappam are the light rice pancakes served in the Southern parts of India. They can be served with Lamb curry, Chicken curry or even Fish curry.
Preparation Time : 10-15 mins

Cooking Time : 15-20 mins

Serves : 5-6

Ingredients:
  • 5 Cup Fine Raw Rice
  • 1 Cup of Cooked Rice
  • 2 tblsp Urid Dal
  • 1 tblsp Salt
  • ½ tblsp Methi seeds(Fenugreek)

Method:
  1. Soak the raw rice, urid dal and methi in water for 3-4 hours.
  2. Soak the cooked rice separately in the water for 3-4 hours.
  3. Grind the raw mixture and cooked rice separately.
  4. Mix both the ground rice and leave it to ferment for overnight.
  5. Heat a cast iron Kadai 8”-10” diameter. Rub with gingelly oil.
  6. Pour 3 – 4 tablespoons of batter into the Kadai spread it by rotating it, so that about 1” of the sides of the Kadai is thinly coated and the remaining batter collected at the centre. Care should be taken that it is rotated only once. Cover with a tight fitting lid with handle preferably metal. Lower heat and cook for 3 – 3½ minutes.
  7. When the appam is ready, the edges resemble crisp lace and centre soft and well risen.
  8. Traditionally this is eaten with chicken curry or paya mutton stew. Children relish it with milk or thick coconut milk and sugar.
