Simple and tastier Prawn coconut stirfry is made with prawns, coconut and Indian spices.

Ingredients :

Small Prawns - 250g
-
Grated coconut - 2 tblsp

Cumin (jeera seeds) - 1/2 tsp
-
Tomato puree - 1 tsp or 1/2 tomato

Onion - 1 small
-
Ginger-garlic paste - 1 tsp
-
Turmeric powder - 1/4 tsp
-
Chilli powder - 3/4 tsp for medium spicy or 1 for extra spicy

Oil - 2 tblsp
-
Water - as required

Salt - to taste
Method :

Clean the prawns, drain it and keept it aside.

Heat a pan; Add cumin, chopped onion and grated coconut. Fry for about 2-3 minutes. Switch off the heat. Let it cool down for few minutes.

Grind it into a smooth paste with 2-3 tblsp of water .

Heat a pan and add oil.

When the oil is hot enough, add ginger-garlic paste, tomato puree or chopped tomato, turmeric powder and chilli powder. Fry for about 1-2 minutes.

Add the ground paste and let it cook until all the water is evaporated.

Squeeze the prawns to get rid of the water and add them into the pan; Let it cook until it becomes dry.

Prawn coconut stirfry is ready to be eaten.
