Ingredients :

Fine Semolina - 250g
-
Sugar - 150g ( + 2 tblspns optional for extra sweetness)

Ghee Or Oil - 75ml
-
Water - 750ml
-
Cashewnuts - 25g
-
Raisins - 10g (optional)
-
Cloves - 2
-
Orange colouring powder - a pinch (optional)
-
Ghee or Butter - 10g for shiny look (optional)
Method :

Roast Semolina without any oil and set aside.

Roast cashewnuts in a tsp of Ghee and set aside.

Heat a pan and add rest of the Ghee/Oil.

Season with cloves.

Add water and colouring and let it boil.

Add semolina and sugar slowly to the pan by stirring and cook it until kesari becomes nearly solid in texture. Add an extra 2 tablespoons of sugar if you prefer sweeter kesari.

Add more ghee if you prefer for a shiny look.

Garnish with cashewnuts and raisins.
