Bhindi or Okra in tamarind sauce is a very good combination for any Biriyani.

Ingredients :

Bhindi - 400g
-
Onion - 1 medium
-
Tomato - 2
-
Garlic - 3 cloves
-
Pepper corn - 1/2 tsp
-
Green chilli - 1
-
Chilli powder - 1 1/2 tsp or 2 tsp for more spicy taste

Turmeric powder - 1/4 tsp
-
Sugar - 1 tsp
-
Curry leaves - few
-
White sesame seeds - 1 tblsp (optional)

Sunflower oil - 60ml
-
Tamarind - ball of 2cm diameter

Warm water - 100ml
-
Water - as required

Salt - to taste
Method :

Remove head and tail from bhindi. Slit the vegetable on the side.

Cut onion, tomato and chilli; Grind the sesame seeds into a coarse powder.

Wash and soak the tamarind in warm water for few minutes.

Squeeze out the tamarind pulp, strain and keep this tamarind juice aside.

Fry the vegetable in a pan of sunflower oil until they become light brown; remove it from the pan and leave it aside separately.

In the same pan where there is some oil left, add curry leaves, pepper, garlic and chopped onion; Saute until onion becomes translucent.

Add chopped tomatoes, turmeric powder and chilli powder; Stir for about 4-5 minutes.

Add tamarind juice, 1/2 cup of water, sugar, and salt; let it boil.

Add the fried vegetables and let it cook in the sauce for few minutes.

After the vegetables are cooked well, add the ground sesame seeds. Let it stay on the heat for few more minutes until the the sauce becomes thicker.

Garnish with curry leaves.
