South Indian way of making a simple and tastier egg curry using tamarind.

Ingredients :
-
Tamarind - size of an Indian Lemon (or 1&1/2" in diameter)
-
Indian Onion shallots - 14-16 or 1 medium
-
Tomato medium - 1
-
Garlic cloves - 2 small (optional)
-
G.Chilli - 1
-
Curry leaves - few
-
Methi (Fenugreek) seeds - 1 tsp
-
Tinned Coconut milk - 4 tblsp or 200ml fresh thin coconut milk
-
Warm water - 200ml
-
Oil - 2 tblsp
-
Water - as per requirement
-
Salt - to taste
Spice powders:
-
Turmeric powder - 1/8 tsp
-
Pepper powder - 1/4 tsp
-
Chilli powder - 1 tsp
-
Coriander powder - 2 tblsp
Ingredients to make an Omlette:
-
Egg medium - 4
-
Indian Onion shallots - 12 or 1 small onion
-
Turmeric powder - 1/8 tsp
-
G.Chilli -1
-
Ground pepper - 1/8 tsp
-
Salt - to taste
-
Oil - 3 tblsp
Method :
-
Wash and soak the tamarind in warm water for few minutes.

Chop the onion and tomato; Wash the curry leaves; Slit the chilli.

Squeeze out the tamarind pulp, strain and keep this tamarind juice aside.

Heat a pan on the stove and add oil.

When the oil is hot enough, add methi seeds and curry leaves and fry for about a minute.

Add the chopped onion, garlic, chilli and tomato and fry for few minutes.

Add all the spice powders and fry to coat them in oil.

Now add the tamarind juice, water and salt to the pan.

Cover and cook for about 8-10 minutes or until the garlic is cooked.

Stir in the middle and make sure there is enough water in the pan.

If a tin coconut milk is going to be added, then add more water.Reduce the heat to low, add coconut milk, stir and cook for about 1-2 minutes.
Method to make an Omlette:

Shred the onion and chilli finely.

Add turmeric powder, ground pepper and 2 pinches of salt to the chopped onion and mix well.

Beat all the eggs well; Add the finely chopped onion, chilli and spice mix; Beat well.

Heat a frying pan on a stove. Add oil.

Separate the egg mixture into two.
-
Pour half of the egg mixture to the pan.

Fry on both sides. Take care when turning it over. When the omlette is ready, cut it into 4 triangles and put them in the tamarind curry.

Repeat the previous 2 steps for the remaining egg mixture.

Let the tamarind curry boil for few minutes.

Now the tasy tamarind omlette cury is ready to be served.
