Prawn curry

Prawn curry is a side dish made of prawns and Indian spices that goes well with Rice or any Indian bread. |

Ingredients: |

Prawns without shell - 250g
-
Onion - 1 medium
-
Tomato - 2 medium
-
Potato - 1 Medium or Egg Plant - 4-5 small (optional)

Ginger-garlic paste - 2 tsp
-
Turmeric powder - 1/4 tsp
-
Chilli powder - 1 for medium spicy or 2 tsp for very spicy

Pepper powder - ½ tsp
-
Green Chilli - 1

Tinned Coconut milk -3 tblsp or 150ml fresh coconut milk

Coriander leaves - few
-
Oil - 2 tblsp

Salt - to taste

Water - as required

Method: |

Chop onion, tomato, chilli and coriander leaves.

Heat oil in a pan on a medium heat.

Add onion. Fry them for about 3-4 minutes.

Add ginger-garlic paste and fry for a minute.

If you are adding potatoes/egg plant, add now and fry for about 3-4 minutes.

Add chopped tomatoes, chilli, turmeric powder, chilli powder and salt; Stir for about 2-3 minutes.

Add 1 cup of water and let it cook until the onion is cooked well and light brown.

Add prawns; Stir and cook for about 1-2 minutes.

Add coconut milk and let it boil for about 2-3 minutes.

Garnish with coriander leaves.
