Potato Fry

Potato Fry is a South Indian way of frying potatoes with Indian spices. |

Ingredients: |

Potatoes - 500g
-
Oil - 4-5 tsp
-
Black mustard seeds - 1/2 tsp
-
Curry leaves - 5-6
-
Salt - to taste
Spice powders:
-
Turmeric powder - 1/8 tsp
-
Chilli powder - 1 for medium spicy and 2 tsp for very spicy

Method: |

Wash the potatoes and chop them into 1cm cubes.

Leave them in a bowl of water and salt for about 10 -15 minutes.

Heat a deeper frying pan on the stove and add oil.

When the oil is hot enough, add mustard seeds and curry leaves. Fry for a min.

Add the chopped potatoes, turmeric powder, chilli powder and salt. Fry for about 4-5 minutes.

Cover and cook for about 7-8 mins.

Open the lid and stir the potatoes few times whilst they are getting cooked to avoid the burning of potatoes at the bottom of the pan.

Once the potatoes are cooked, fry for further 7-8 minutes to make them crispier.

Stir it few times to avoid the burning of potatoes at the bottom of the pan.

Serve them in a serving dish when they are ready.
