Tomato Rice

Ingredients: |

Cooked Rice - 3 cups

Onion cut - 2 tblsp
-
Tomato - 4
-
Oil - 3 tblsp
-
Urid dal - 1 tsp
-
Curry leaves - 7-8
-
Dry red chilli - 1
-
Channa Dal - 1 tblsp (optional)

Turmeric Powder - 1/8 tsp
-
Chilli powder - 1/2 tsp for medium spicy and 1 tsp for extra spicy

Ground fennel seeds (sombu) - 1/2 tsp (optional)

Tomato puree - 1 tsp (optional )

Method: |

Cut the onion and tomatoes. Grind 1/2 a tsp of fennel seeds if you are adding.

Warm up the cooked rice if it is cold and leave it on a wide dish so that it will be to be easier for stirring.

Heat a 1 ltr pan on a stove.

Pour oil into the pan.

When the oil is hot enough, add urid dal, curry leaves, chilli and channa dal.

Fry for a minute. Add turmeric powder, chilli powder, ground fennel seeds, chopped onion and tomatoes.

Add the tomato puree now if you like the rice to taste a bit sour.

Let it cook until the oil separates out and the tomatoes are cooked well and become a thick sauce.

Pour this mixture to the dish of cooked rice.

Stir well.

Tomato Rice is ready to be eaten.
