Potato Masala is a great combination for pooris or any Indian bread.

Ingredients :

Potato - 3 medium or 6 small

Oil - 2 tblsp

Black mustard seeds - 1/2 tsp
-
Curry leaves - 5-6
-
Onion - 1 medium
-
Ginger - 1/2 inch long and 1" wide piece

Channa dal- 1 tsp
-
Green chilli - 2
-
Lime juice - 1 tsp
-
Tomato - 1 (optional)
-
Coriander leaves chopped - ½ tblsp for garnishing

Salt - to taste
Spice powders:

Turmeric powder - 1/4 tsp
-
Chilli powder - 1/2 tsp (optional)
Method :

** Boil potatoes in their skin with salt and half of turmeric powder in a presure cooker for about 5 minutes or until they are cooked well.

Peel and mash. Cut onions into fairly large cubes. Cut green chillies and ginger into small pieces. Chop the coriander leaves. Chop the tomato if it is being added.

Heat a frying pan on the stove and add oil.

Heat oil, add mustard seeds, channa dal, broken red chillies and curry leaves.

Add the chopped onion, chilli, ginger and tomatoes. Fry for about 4-5 minutes.

Add the mashed potatoes, turmeric powder, chilli powder and salt. Fry for about 2-3 minutes.

Add about a cup of water and cook until dry.

Add lime juice and coriander leaves. Mix well and take off fire.
** - If the pressure cooker is not available, replace the step 1 starting with the symbol ** with the following step and continue to step 2.
Cook potatoes in a large pan with plenty of water, salt and half of turmeric powder on a medium heat covered with lid for about 10-15 minutes.
Notes : Suitable for Pooris or chapatis.
