Frying Snake gourd with Indian spices makes a tastier side-dish.

Ingredients :

Snake gourd/Marrow - 1 small or 250g

Turmeric powder - a pinch
-
Dry Red Chilli - 1 for medium spicy or 2 for very spicy

Grated coconut - 1 tblsp (optional)

Cumin (jeera) powder - 1/2 tsp (optional)

Curry leaves - few

Oil - 2 tsp
-
Mustard seeds - 1/2 tsp
-
Urid dhal - 1 tsp
-
Chopped onion - 1 tblsp (optional)

Salt - to taste
Method :

Peel off the vegetable, cut it diagonally, remove all the seeds and chop it into 1cm slices.

Boil the vegetable in a pan of water and salt until it is half cooked. Drain it and keep it aside.

Heat a frying pan on the stove.

Add oil. Add mustard seeds, urid dhal, chilli and curry leaves and let the mustard seeds pop.

When the mustard seeds started to pop, add onion and fry for a minute.

Add the cooked vegetables, turmeric powder and cumin powder; stir for about 1-2 minutes.

Cover and cook on medium heat until it is cooked well. It might take about 5-6 minutes.

Open the lid and stir few times and make sure there is any water left for the vegetable to be cooked.

Garnish with grated coconut.
