Egg coconut masala also called Kajana combines the sweet taste of coconut and spicy taste of green chilli with the egg mixture.

Ingredients :

Egg - 3
-
Indian onion shallots - 8-10 - finely grated
-
Green chilli - 2
-
Ginger-garlic paste - 1 tsp
-
Grated coconut - 3 tblsp
-
Oil - 2 tblsp
-
Water - as required
-
Salt - to taste
-
Coriander leaves chopped - 1 tsp to garnish
Spice powders:

Turmeric powder - 1/8 tsp
-
Chilli powder - 1/2 tsp
-
Pepper powder - 1/4 tsp
Method :

Grate the onions and chillies finely.

Grate the coconut and grind it with little water into a smooth paste.

Beat the egg. Add ginger-garlic paste and ground coconut to the beaten eggs. Stir well.

Heat a pan on medium heat and add oil.

Add the chopped onion and chillies; fry for few minutes.

Add all the spice powders and salt; stir well.

Add the egg mixture and about 150ml of water to the pan; Stir well.

Reduce the heat to low, cover and cook for about 4-5 minutes.

Garnish with coriander leaves.
Notes : This recipe goes well with Dosai or Aappam.
