Ingredients :

Bitter gourd - 3
-
Turmeric powder - 1/8 tsp
-
Dry red Chilli - 1½
-
Grated coconut - 1 tblsp (optional)
-
Cumin (jeera) powder - ½ tsp (optional)

Curry leaves - few
-
Oil - 4 tsp
-
Mustard seeds - ½ tsp
-
Urid dhal - 1 tsp
-
Chopped onion - 1 tblsp
-
Tomato puree - 1 tsp
-
Sugar - 2 tblsp
-
Yoghurt (Curd) - 50g or 3 tblsp

Salt - to taste
Method :

Cut it diagonally, remove all the seeds and chop it into 1 cm slices.

Soak the vegetable in yoghurt for about 30 minutes to take off the bitterness of the vegetable.

Heat a frying pan on the stove.

Add 2 tsp oil. Season with mustard seeds, urid dhal, chilli and curry leaves.

When the mustard seeds started to pop, add onion and fry for about a minute.

Add the chopped vegetables, tomato puree, turmeric powder, sugar and cumin powder and stir for about 1-2 minutes.

Cover and cook on medium heat for about 10-12 minutes.

Open the lid, add 2 tsp oil and stirfry for about 4-5 minutes until they become crispier.

Garnish with grated coconut.
