Banana bread

Banana bread also called Banana cake tastes so good and easy to make that you want to make it so frequently. It can be made easily from left over bananas and other ingredients.

Ingredients :

 

  • 125g butter plus extra for greasing
  • 50ml sunflower oil
  • 200g caster sugar
  • 225g plain flour (All purpose flour)
  • 2 eggs large
  • 1 tsp baking powder
  • 1 tsp vanilla essence
  • 2 large bananas each weighing about 75-90g after peeled
  • 2 tblsp milk
  • 2 tblsp of chopped walnuts (optional)
  • Medium size (8"x5") bread tin

Method :
  1. Mash the bananas either by hand or in the blender to a smooth texture.
  2. Break the eggs in a seperate bowl and whisk it unitil it is frothy.
  3. Preheat the oven to about 180°celsius or 350° Farenheit.
  4. Sift the flour and baking powder into a large bowl.
  5. Cream the butter and sugar in a different bowl until all the sugar is dissolved and looks fluffy. Add oil and mix.
  6. Add the whisked eggs, mashed bananas, milk and vanilla essence to the butter and sugar bowl and mix it well.
  7. Add the flour and baking powder. Fold it until it is mixed properly.
  8. Add the walnuts now if they are being added; mix it well.
  9. Grease the bread tin with 1/2 a tsp of butter. Pour in the cake mixture into the tin. Pat it carefully at the bottom of the bread tin to let some air in.
  10. Place the bread tin in the middle oven shelf and bake for about 55 mins or until it is fully cooked inside and brown outside.
  11. Remove the tin from the oven and let it cool for few minutes before transferring it onto a wire rack.
  12. It can be served either hot or cold.
