Ingredients :

Basmati Rice - 750g
-
Oil - 100ml or 6 tblsp
-
Cinnamon - 1-2 pieces of 1/2 inch long strips

Cardomom - 1 (optional)
-
Cloves - 2-3
-
Paandan leaf (Biriyani leaf) - 1 (optional)
-
Peas - 75g (optional)
-
Onion - 1 medium
-
Tomatoes - 1
-
Green Chilli - 1
-
Ginger-Garlic paste - 2 tsp
-
Chopped coriander leaves - 1 tblsp
-
Chopped mint Leaves - 1 tblsp

Ghee - 2 tsp or Butter - 10g

Water - as required

Salt - to taste
Method :

Chop all the onions, tomatoes, chillies and herbs.

Wash and soak the rice in a big pot of water for 10 minutes. Drain it.

Heat a 3 litre saucepan on a medium heat and add oil.

Add cinnamon,cloves and cardamon; fry for about 1/2 a minute.

Add onion, chilli, coriander leaves and mint leaves and fry for about 3-4 minutes.

Add tomatoes and fry for about 2-3 minutes.

Add rice; fry for about 4-5 minutes.

Add about 1 litre and 150ml (4 cups and 2/3 of a cup) of water and salt.

When the water starts to boil, reduce the flame to low, cover and cook the rice for about 15-20 minutes or until all the water is evapourated.

If you are adding peas, add it when the rice is nearly cooked as it takes only 2-3 minutes to get cooked.
Notes : Caution:Cooking time and required amount of water varies depending on the kind of rice and whether it is new or old. Water quantity mentioned here is just a guideline only.
You could also add vegetables like peas or mushrooms. If you add 2 teaspoon of cumin seeds at the time of adding cinnamon, it becomes jeera rice.
