Put the flour in a bowl. Pour the boiling water with salt to taste. Mix with the handle of a wooden spoon. Knead into a smooth dough.

Press out about 1½ - 2 tablespoon dough through a idiyappam press onto a bamboo plates.

Steam 6 – 8 of these at a time over boiling water.
Note: If either a steamed or roasted rice flour is not available, then sieve the flour well. Steam it over boiling water for ½ hr, keeping it covered. Allow to cool still under cover.The flour can be steamed in the evening and kept covered overnight for use in the morning.
