Raitha is a sauce made of yoghurt and cucumber/carrot/onion/tomato made as a side-dish for any Indian food like Biriyanis.

Ingredients: |

Curd (yoghurt) - 500g

Cucumber - 1/2 medium or Carrot/Onion - 1 medium or Tomato - 3 small

Green chilli - 1 (optional)

Coriander leaves chopped - 2 tsp (optional)

Lemon juice/Mint sauce - 1 tsp (optional)

Salt - to taste

Method: |

Grate the cucumber/carrot or chop the onion/tomato finely; Chop the chilli if it is being added.

Combine all the yoghurt, salt, mint sauce/lemon juice, chilli and the grated vegetable.

Serve in a serving bowl.
