Coconut milk Rice

Coconut milk rice is a variety of rice that can be made on special occasion. |

Ingredients: |

Basmati Rice - 750g
-
Oil - 90ml ( 30ml for every 250g of rice)

Cinnamon - 1/2 inch long strip

Fenugreek - 1 tsp

Onion - 1 medium

Paandan leaves or Bay Leaves - 2-3

Garlic - 6-7 small cloves
-
Thick tinned coconut milk - 6 tblsp or 200ml fresh coconut milk

Water - as required

Salt - to taste

Method: |

Chop all the onion and garlic; Rinse the rice and soak it in water for about 10 minutes.

Wash and soak the rice in a big pot of water for 10 minutes. Drain it.

Heat a 3 litre saucepan on a medium heat and add oil.

Add cinnamon and fenugreek; fry for about 1/2 a minute.

Add onion and garlic; saute them on a medium heat until they become translucent.

Add about 1ltr of water, coconut milk, bay/paandan leaves and salt. If you are adding fresh coconut milk, reduce the amount of water.

When the water starts to boil, drain the rice and add it; reduce the flame to low, cover and cook the rice for about 15-20 minutes or until all the water is evaporated.
