Urid dhal pancake

Urid dhal pancakes are rich in protien and well suited for breakfast/dinner/teatime. |

Ingredients: |

Urid Dhal - 250g or 1 of 250ml teacup
-
Eggs - 3
-
Onion small - 1/2
-
Green chilli - 2
-
Ground rice - 2 tblsp
-
Curry leaves - few
-
Oil - 100ml for frying
-
Salt - to taste
-
Water - as required

Method: |

Soak dhal in water for an hour.

Chop onion, chilli and curry leaves.

Grind the soaked dhal with little water to a fine frothy paste.

Leave it for about 2-3 hours for it to raise. Leave it overnight if you have time.

Beat the eggs well in a separate bowl.

Combine the ground dhal, beaten eggs, onion, chilli, salt, curry leaves and ground rice. Add water if needed.

Heat a frying pan.

Add a tsp of oil.

Pour a big scoop of batter to the pan and spread it so that the pancake is about 5 inches in diameter.

Cover and let it cook for about 2-3 minutes.

Turn it over and add about a tsp of oil. Let it become golden brown on this side.

Remove the pancake and set aside.

Repeat the last six steps until all the batter is made into pancakes.

Urid dhal pancakes are ready to be eaten.
