Marrow curry

Cooking Marrow(Dudhi/Sorakkai) with Indian spices and prawns or egg makes a tastier side-dish. |

Ingredients: |

Bottle gourd (Dudhi/Sorakkai) or Marrow - 1 small or 1/2 large
-
Onion - 50g or 1/2 small
-
Tomato - 1/2
-
Turmeric powder - 1/8 tsp
-
Chilli powder - 1/2 tsp
-
King Prawn - 8-10 or Egg - 1
-
Green chilli - 1 (optional)
-
Tinned coconut milk - 1 tblsp or 100ml fresh coconut milk

Cinnamon - 1cm long strip
-
Curry leaves - 1 Sprig (optional)

Oil - 1 tblsp
-
Salt - to taste

Water - as required

Method: |

Chop the onion and tomato. Peel off the marrow and chop it into 2cm cubes.

Heat a pan and add oil.

Add curry leaves, onion, chilli and saute for 2-3 minutes.

Add tomato, turmeric powder, chilli powder and saute for 2-3 minutes.

Add chopped vegetable and stir-fry for 1-2 minutes.

Add salt and 3/4 cup of water.

Cover and cook for about 10-12 minutes on a medium heat.

Stir the vegetables few times when they are getting cooked. Make sure there is enough water in the pan for the vegetables to be cooked while stirring.

After the vegetables are cooked, add either the egg or prawns to the pan now.

If egg is being added, break it into a small bowl, beat it and add it to the pan of vegetables.

Add coconut milk and let it cook for about 2-3 minutes.
