Kovakkai StirFry

Stir-frying Kovakkai(Tindora/little gourd) with Indian spices makes a tastier side-dish for rice or chapati. |

Ingredients: |

Kovakkai - 250g
-
Onion - 1 small
-
Tomato - 1
-
Turmeric powder - 1/8 tsp
-
Chilli powder - 1 tsp
-
Curry leaves - few (optional)
-
Oil - 1 & 1/2 tblsp
-
Salt - to taste
-
Water - as required

Method: |

Chop the onion and tomato; chop the vegetable diagonally into thin slices.

Heat a pan and add oil.

Add curry leaves, onion and saute for few minutes.

Add tomato and all the spices and saute for few minutes.

Add chopped kovakkai and stir for 1-2 minutes.

Add 1/4 cup of water, cover and let it cook for about 8-10 minutes or until the vegetable is cooked. Open the lid and stir every few minutes.

Kovakkai stirfry is ready to be eaten.
