Baked Fruit

Serves : 3-4

Ingredients:

    1 apple
    1 pear
    55g/2oz pineapple chunks
    1 nectarine
    1 tbsp. pomegranate
    1 tbsp. honey/maple syrup
    1 tsp. cinnamon
    1 tsp. coconut sugar
    1 rhubarb
    1 tbsp. chopped walnuts

Method:
  1. Preheat the oven to 170C/340F.
  2. Chop all the fruit and place in a greased baking tray.
  3. Drizzle the honey/maple syrup on top then sprinkle with cinnamon and coconut sugar. Finish with the squeezed lemon juice.
  4. Place in the oven for 40 minutes then add the walnuts on top and return to the oven for a further 20 minutes.
