Baked Vegetables

A delicious pot of layered vegetables that goes well with any main such as a pasta dish and is bursting full of goodness.
Preparation Time : 10 mins

Cooking Time : 15-20 mins

Serves : 3-4

Ingredients:
  • Courgette - 1
  • Spinach - 75g
  • Green Pepper - 1/2
  • Red Onion - 1/2 (optional)
  • Aubergine - half of medium (optional)
  • Tomato - 1 big
  • Mozarella Cheese - 75g
  • Butter - 5g
  • Salt - to taste
  • Ground pepper - 1/2 tsp

Method:
  1. Switch on the oven to 180 degree celsius / 350 degree fahrenheit.
  2. Slice courgette into long thin slices. Slice the green pepper, onion and tomato and grate the cheese.
  3. Wash the spinach leaves.
  4. If you are adding Aubergine, slice it diagonally and grill it or toast on the frying pan without any oil on both sides.
  5. Grease the oven proof rectangular dish with butter.
  6. Arrange the sliced courgettes to the bottom of the dish.
  7. If you are adding aubergine, layer them now.
  8. Then add a layer of green pepper and onion. Spread them to cover the whole dish.
  9. Put the spinach leaves on top and spread them to cover the whole dish.
  10. Sprinkle the grated cheese over the dish.
  11. Arrange the slices of tomato over the top of this.
  12. Season with salt and pepper.
  13. Cook in the oven for about 20mins.

Notes:
Mozarella cheese can be replaced by Cheddar cheese.
