Green Beans with prawns masala

This is one my favourite sides that goes with a variety of curries, mainly vegetarian ones like sambar, rasam or tamarind curries. It goes well with chapatis as well. |

Ingredients: |

Green Beans- 250g
-
Onion - 1 small
-
Tomato - 1
-
King prawns - 8-10
-
Green chilli - 1 (optional)
-
Tomato puree - 1/2 tsp (optional)
-
Tinned coconut milk - 2 tsp or 1 1/2 tblsp fresh coconut milk (optional)

Cinnamon - 1cm long strip
-
Curry leaves - few (optional)
-
Oil - 2 tblsp
-
Salt - to taste
-
Water - as required
Spices:

Turmeric - 1/8 tsp
-
Chilli powder - 1 tsp

Method: |

Chop the onion and tomato. Chop the beans into 1 inch pieces.

Heat a pan on a medium heat and add oil.

Add the curry leaves and cinnamon and fry for about 1/2 a minute.

Add chopped onion and chilli and fry for few minutes.

Add the prawns, turmeric and chilli powder and saute for few minutes.

Add the chopped beans, chopped tomato, and tomato puree; stir-fry for a further 1-2 minutes.

Add salt and 1/2 a cup of water. Cover and cook on a medium heat until the beans are tender enough.

Stir the vegetables once or twice when they are getting cooked.

Add coconut milk at the end and boil for about 2-3 minutes.
